Solok Lada Berkeju

Of late, there has been quite a few programmes focusing on Mexican food shown on television.  One thing about these programmes is that they are very interesting to watch because of the novelty of the things or ingredients used.  The drawback however, is that the things are not easy to come by in this neck of the woods.

But necessity breeds ingenuity, and so I took it upon myself to substitute some of the things mentioned in the shows that are not sold here, probably because of the lack of demand.  I am not sure about the taste however, since I don't have any experience on eating Mexican food to fall back on.  Then again, my success has always relied on the quality control people in my own home.  And they gave this Jalapeno Poppers their thumbs up!

  • 12 jalapenos, cut into half, seeds removed
  • 1 cup cream cheese
  • 1 tsp chicken stock  granules
  • 1/4 cup cooked chicken burger, crumbled
  • 1/4 cup breadcrumbs

In a bowl, mix the cream cheese, chicken stock granules, chicken burger and breadcrumbs.  Mean while preheat oven to 180 C.  Fill the jalapeno halves with one teaspoon of the cream cheese mixture each.  Place all the twenty four filled jalapeno halves onto a baking tray and bake for about 25 minutes.

I found that, it is best to eat these Jalapeno Poppers while they are still hot because the chilies still retain retain their crunch.  If you wait for them to cool, the jalapenos become wilted.
